Like all businesses, the Blue Heron is making some adjustments to the economic climate—offering a $25 three-course dinner on Sundays. But what's not changing is co-owners Barbara White's and Deborah Snow's commitment to local sustainability. That means a menu filled with local and organic items (including meat, which can be hard to find) that reflect the Valley's growing seasons. "Even in these times, we refuse to not keep our core values of community and sustainability," says Snow. "How I buy products for the restaurant is how I vote."
