Whenever I’m out for breakfast at the Silver Spoon in Easthampton, which is pretty regularly, I almost always order their Crow’s Nest.

This hearty dish consists of two poached eggs on a bed of homemade corned beef hash, smothered with Hollandaise sauce. I like to slide the buttered English muffins under the eggs and hash, and recently I was told that in order to get the chef to prepare it for me this way, all I need to do is request the Nest as “an Irish Benedict.”

I also learned, as I was photographing one of my favorite Valley delicacies, that soon the Crow’s Nest and all the other scrumptious offerings at the Silver Spoon will be easily available to residents of Williamsburg as owner Jeff Doyle’s franchise expands into the hilltowns. He’s hoping to fill the void for a satisfying but affordable lunch and breakfast place in ‘Burgy.

No matter where in the Valley you are, though, if you’ve got a void needing to be filled, the Silver Spoon Crow’s Nest is likely to do the trick, and then some.
