Come for the buttermilk fried chicken and stay for the speakeasy-esque atmosphere. Coco & The Cellar Bar in Easthampton features a menu created from seasonal ingredients and a unique cocktail menu. “We just try to keep things pretty simple,” says Roger Taylor, who owns the restaurant with his wife Unmi. “Jalapeno slaw, mashed potatoes, gravy, easy peasy. We try not to take ourselves too seriously. It’s not a white tablecloth kind of place.” The cocktail program at Coco & The Cellar Bar is built to match the food, he says. “If our restaurant had a ethos it would be, ‘just because you can do something, doesn’t mean you should.’” This is the fourth year in a row that Unmi has been nominated as one of the best chefs in the Northeast from the James Beard Foundation, a nonprofit culinary arts organization based in New York City.
